Mar 31, 2012 · From what I gather the Grass Carp is better table fair than the Common Carp. The most difficult part if filleting them as they have a strange skeletal structure. The Grass Carp, and Silver (Asian) Carp have a similar skeletal structure so the video below should be helpful as far as filleting. Main thing is remove the dark red flesh. No special permit is required of the pond owner to stock grass carp at this time, but pond owners should obtain verification from the sellers that they are purchasing triploid grass carp.
